Pineland Pit Beef Sirloin with Tiger Sauce & Corn Salad

Ingredients

For the pit beef:

  • 1 2lb Pineland Farms Natural Meats top sirloin
  • 2 tsp ground pepper
  • 2 tsp kosher salt
  • 2 tsp paprika
  • 2 tsp onion powder
  • 2 Tbsp dried thyme

For the corn salad

  • 6 ears corn, shucked and remove kernels (if corn not fresh, two bags of frozen sweet corn recommended)
  • 1 Tbsp butter
  • 2 strips of bacon, chopped
  • 1 red onion, chopped
  • 1 red pepper, chopped
  • 1/4 cup mayonnaise
  • 2 Tbsp horseradish
  • 2 Tbsp Old Bay Seasoning
  • Zest and juice of 1/2 lime
  • Salt to taste

Directions

Place a cast iron on the grill and heat to 400º. Mix all the spices for the beef together and generously season both sides of the sirloin. Add butter to the pan and place sirloin on the hot cast iron. Cook for 4 minutes, flip and cook for another 4 minutes or until the internal temperature is 125º. You're looking for a good crust yet medium rare in the middle. Set aside and let rest for 5 minutes.

For the corn salad, place a sauté pan on medium heat. Add bacon and cook for 5 minutes, until crispy. Chop the bacon and set aside, leaving the bacon fat in the pan. In the same pan, sauté the chopped pepper and onion for 3 to 5 minutes. Next, add corn and salt to taste and sauté for 6 minutes. Once done, add the contents into a mixing bowl with chopped bacon. In a separate bowl, mix together horseradish, mayonnaise, Old Bay Seasoning, lime zest, and lime juice to make the tiger sauce. Add the tiger sauce to the corn salad mixture and mix.

Thinly slice your sirloin and serve with tiger sauce corn salad. 

Chef's Tip

Cut your steaks against the grain. By cutting against the grain of your steak, you shorten the fibers. This makes it easier to chew and appreciate the taste of your meat.
