Stuffed Peppers

Ingredients

  • 1 large red pepper
  • 1 large orange pepper
  • 1 large green pepper
  • 2 packs 1 lb 80/20 Pineland Farms Ground Beef
  • 1 cup rice
  • 1 medium onion, grated
  • 1 garlic clove, crushed
  • 1 large can (29 oz) canned tomato sauce
  • ½ cup water
  • Salt and pepper to taste
  • ½ cup 3-cheese blend

Directions

Heat your oven to 350º. In the meantime, start cutting each pepper in half lengthwise. Remove both seeds and stems. Next, in a mixing bowl add the beef, rice, onion, garlic, and salt and pepper to taste. Mix together well. Place the peppers in a glass baking dish with the cut side up. Stuff the peppers with the beef mixture.

In the same mixing bowl, add the tomato sauce and water and mix to combine. Pour on top of the stuffed peppers. Season with salt and pepper. Place the baking dish in the oven for 1 hour. With 3 minutes left in the oven, sprinkle the cheese evenly across the six peppers.

Remove from the oven, let cool, and serve!
